To all those Dads and kids out there, it's time to get together and make Mum feel special. Show how much you appreciate her by making one of these two specially selected tasty and healthy Mother's Day treats.
Mum will be thrilled with these mouth-watering Breakfast Cakes and the Oat Bran and Honey Dessert. Not only are they tasty, they contain nutritious oat bran and wheat, so your surprise will be healthy for Mum as well.
And don't worry Dad - you and the kids will have fun making these great recipes because they're simple and easy to prepare and bake.
As the time-honoured saying goes: 'Everything is good in moderation'. Desserts and treats can be part of a healthy diet in moderation, especially on Mother's Day.
The key is to try and choose desserts that are low in saturated fat and sugar where possible, and always try to incorporate healthy wholegrain ingredients such as oats and wheat.
Wholegrain foods contain all the components of the grain - the bran, germ and endosperm. Wholegrains are a great source of essential nutrients containing many health-giving nutrients such as vitamins, minerals and fibre.
Try these Recipes for Mother's Day
The first of our Mother's Day recipes, Breakfast Cakes, contains crushed mini-wheats, a wholesome grain that gives these little gems a beautiful texture. Your mum is sure to enjoy the fresh-baked aroma filling your home at breakfast time. What a great way to start Mother's Day.
And Mum needn't feel guilty about sitting down to your Oat Bran and Honey Dessert after Mother's Day lunch. Just two slices of the bread used in this recipe provides 80 per cent of the recommended dietary intake of folate, and each slice contains the soluble fibre from oatbran that helps to promote heart health.
Grain foods in general contain a wide range of nutrients, including carbohydrate, dietary fibre, protein, unsaturated fat, vitamins and minerals. So it's always good to try and include grain foods in your diet every day.
A healthy diet should contain at least four serves of 'breads and cereals' each day, according to the official dietary guidelines. One serve is two slices of bread, or one cup of cooked rice or pasta, or just over a cup of flaked breakfast cereal.
So spoil Mum with one of these treats this Mother's Day, and you'll also help her get closer to the right number of serves of grain-based foods on her special day.
Breakfast Cakes
Makes 10 (approx)
Cooking Time - 18 mins
Ingredients:
½ cup white self raising flour, sifted and ½ cup wholemeal self raising flour
4 tbsp sugar
1 tsp ground cinnamon
½ cup sultanas
1 ½ cups Kellogg's® Mini-Wheats®, crushed
50g margarine, melted
1 cup reduced fat milk
1 egg
Method:
1. Pre-heat oven to 190°C. Place flour, sugar, cinnamon, sultanas and Kellogg's® Mini-Wheats® in a large bowl and mix well.
2. Make a well in the centre. Whisk together the margarine, milk and egg until well combined.
3. Slowly pour mixture into the centre of the bowl and gently incorporate the dry ingredients and stir until just combined.
4. Spoon into lightly greased muffin tins and place into the oven on the middle shelf for approx. 18 minutes or until golden brown.
