Grated parmesan cheese
Extra parmesan cheese and rocket to serve
Method
1. Cut pumpkin into small cubes and roast.
2. Dip fresh pasta lasagne sheets in boiling water to soften, remove and lay them flat in a baking dish.
3. Top with cubes of roasted pumpkin, crumbled feta and baby spinach and roll up.
4. Pour over Napoli sauce, and sprinkle parmesan cheese over and bake in moderate oven for approximately 20 minutes.
5. Serve topped with extra parmesan cheese, rocket and a green salad.
This is a great dish to get the kids to help prepare as they can easily and safely fill and roll up the pasta sheets.

Encourage your child to try the more nutritious fibre-rich carbohydrate foods such as wholegrain breads and cereals rather than the ‘refined’ white versions.
