Raspberry and hazelnut muffins

Heart disease is the leading cause of death in Australian women today,
and on average, kills about 11,424 women a year, approximately 31 women
a day. Physical inactivity, smoking and obesity are the main factors of
cardiovascular disease. But looking after your health with a healthy
balanced diet and exercise can help fight this disease. Research has
found that regularly eating nuts can reduce the risk of heart disease,
and can improve blood circulation and lower the body's cholesterol. All
it takes is just one small handful of nuts most days.
Nuts are
an excellent source of protein, and are rich in dietary fibre and
antioxidants such as Vitamin E, zinc and selenium. Studies have also
shown that women who eat a small handful of nuts regularly as part of a
weight management diet are 40 percent less likely to contract heart
disease.
Ingredients:
2½ cups self raising flour, sifted
¾ cup caster sugar
1/2 teaspoon ground cinnamon
1 cup skim milk
2 eggs, lightly whisked
1/3 cup canola oil
1 cup fresh or frozen raspberries
100g raw hazelnuts, roughly chopped
Method:
1.Preheat oven to 180C.
2.Place the flour, sugar and cinnamon in a large bowl, making a well in
the centre.
3.Combine the milk, eggs, oil, raspberries and hazelnuts and add to the
flour mixture, stirring until just combined.
4.Spoon the mixture into 1/2 cup capacity non stick muffin holes,
filling 3/4 full.
5.Bake for 15-20 minutes or until cooked through and golden. Makes 15.
Note : if using frozen raspberries, thaw before use.
