SEEDLESS WATERMELON BENEDICT:
Ingredients:
- 1 1/2 cups low-fat granola
- 1/3 cup honey at room temperature
- 4 to 6 (3-inch round and 3/4-inch thick) circles of SEEDLESS WATERMELON
- 4 to 6 (1/2-inch thick) slices of peeled kiwi fruit
- 1 cup low-fat creamy lemon yoghurt
- 2 or 3 seedless purple grapes, sliced in half to garnish
Method:
1. Mix the granola and honey by drizzling the honey evenly over the granola as you stir.
2. On a serving plate, make 3-inch circles of granola of even thickness, dividing the granola/honey mixture evenly among the servings.
3. Top each of the granola circles with a seedless watermelon slice and place a slice of kiwi fruit on each SEEDLESS WATERMELON circle.
4. Spoon the yoghurt over the kiwi and SEEDLESS WATERMELON as though it were hollandaise sauce on eggs benedict.
5. Top each SEEDLESS WATERMELON benedict with a grape half; skin side up as a garnish reminiscent of the olive slice on eggs benedict.
Prefer something even quicker and easier? The below recipe can even be made up the night before and chilled overnight, ready as soon as Mum wakes up on her special day!
SEEDLESS WATERMELON BRUNCH MUESLI
Ingredients:
- 400g Low Fat Vanilla Yoghurt
- 12 Tablespoons of Toasted Muesli
- ½ Large Wedge SEEDLESS WATERMELON (cubed)
- 4 Teaspoons of Maple Syrup
Method:
1. In a large glass, layer the ingredients like so:
- Bottom Layer: Toasted Muesli
- Next Layer: SEEDLESS WATERMELON Cubes
- Next Layer: Low Fat Vanilla Yoghurt
- Next Layer: Toasted Muesli
- Next Layer: SEEDLESS WATERMELON Cubes
- Top Layer: Low Fat Vanilla Yoghurt
2. Top with additional cubes of SEEDLESS WATERMELON to garnish!
