Lemon & Nigella Seed Muffins
Ingredients
- ¼ cup coconut oil
- ¾ cup almond milk
- 8 tbsp freshly squeezed lemon juice
- 2 tbsp lemon zest
- ½ cup maple syrup
- 1 tsp vanilla extract
- 3 tbsp Hab Shifa Black Seeds
- 2 ½ cups almond meal
- 1 tbsp baking powder
- 1 tsp bicarbonate soda
Method
- Preheat oven to 180 degrees.
- Place the coconut oil in a bowl and microwave for one minute until melted.
- Remove bowl and add the milk, lemon juice, lemon zest, maple syrup, vanilla extract, black seeds and almond meal, baking powder and bicarbonate of soda.
- Mix well, adding a splash of milk if too dry.
- Transfer the mixture between muffin cases in a muffin tin.
- Bake in the oven for 15-20 minutes until risen or until an inserted skewer comes out clean.
