Kim McCosker: There are over 400 and I am very please to tell you that every single one of them still follows the 4 Ingredients philosophies of quick, easy and delicious. Top 4 Tips for a Relaxed Christmas
1.Plan Ahead: Set a menu and pre-prepare. From out Menu Planner, everything can eb made and prepared ahead of time, leaving only the main meal to cook on the day
Serve 4
Ingredients
2 ripe avocados
½ Spanish onion, finely chopped
¼ bunch coriander, chopped
1 lemon, juiced.
Method
Peel and dice avocado into 1cm cubes.
Add onion and coriander. Drizzle with lemon juice to taste and season as desired.
Optional: Serve with a plate of freshly cut carrot sticks.
Tip: If prepared ahead of time, return seed dip to stop discoloration. Cover and place in refrigerator until ready to serve.

The word 'kebab' is Arabic and means 'on a skewer'!
Ingredients
1 red capsicum
1 Spanish onion
¼ fresh pineapple
8 large mushrooms, washed and halved
Method
Cut first three ingredients into large chunks and threat alternately with mushrooms onto a soaked skewer.
Grill on a hot BBQ for a couple of minutes, each side, or until soft and warm.
Serves 6
Ingredients
1 chicken, cut into pieces
2 lemons, quarted
2 tbs. honey
2 sprigs rosemary
Method
Preheat over to 180 degrees.
Put chicken skin side up in a large baking dish.
Mix the juice of the lemons with the honey in a small bowl and pour over chicken pieces.
Place squeezed lemon pieces in the baking dish for extra flavour. Season with sea salt and pepper.
Cook for 40 minutes or until chicken is cooked and skin golden.
Remove from over and discard lemon halves.
Pour juices into a saucepan and boil uncovered for five minutes or until the juices have thickened slightly.
Serve with your families favourite roasted or green vegetables, such as zucchinis sautéed and sprinkled with parsley.

Ingredients
350g pkt silken tofu (bought to room temperature)
280g dark chocolate chips
1 tbs pure maple syrup
1 tsp. Vanilla extract
Method
Blend tofu in food processor, blender, or hand held mixer until just smooth.
In a double boiler, melt chocolate chips over low heat, stirring constantly.
Add maple syrup to melted chocolate and combine.
Add to tofu and mix until creamy.
Pour into four small serving dishes and chill until serve.
