Baked Salmon, Potato and Zucchini in Parchment Paper

Fish is a popular dinner option for many families around Easter! Fish options like salmon have a rich source of protein and Omega-3 fatty acids, helping kids grow strong and healthy.

Ingredients
1 potato sliced
1 zucchini sliced
1 fillet of salmon
½ lemon sliced
Salt
Pepper
15ml oil
Thyme

Method
Preheat oven to 180oC.
Fold a large piece of parchment paper on a baking tray. Lay zucchini and potatoes on the parchment paper, place the salmon on top.
Season with salt, pepper, oil and thyme. Finish with lemon slices on top.
Fold parchment securely over salmon.
Bake for 15 to 17 minutes until salmon is cooked to your liking.
