INGREDIENTS
● 500g chicken thigh, cut into 3cm chunks
● 200ml buttermilk or thick yoghurt
● ½ cup plain flour
● ¼ cup corn flour
● ½ tsp baking powder
● 60g Kellogg's® Nutri-Grain®
● 9 small store-bought mini waffles, halved
● Maple syrup to serve
● Blueberries to serve
Spice mix:
● 2 tsp smoked paprika
● 1 tsp each garlic powder, onion powder
● ½ tsp each, white pepper, cayenne pepper, ground cumin
DIRECTIONS
1. For the spice mix, combine all the ingredients with 2 tsp salt flakes.
3. Combine the plain flour and corn flour with the remaining half of the spice mix in a big bowl. Crush the Nutri-Grain in a food processor or Ziploc bag until the crumbs resemble the size of panko crumbs. Combine with the flour mixture. Working with one piece of chicken at a time, take a piece and coat with the Nutri-Grain flour mixture.
4. Half-fill a large saucepan with oil, place over medium-high temperature and heat the oil to 150°C then cook the chicken in batches for 4 minutes or until golden and cooked through. Remove with a slotted spoon and drain on a wire rack.
5. Heat the waffles, as per packet instructions and brush with some maple syrup. Serve the chicken on waffles, doused with maple syrup & scattered with blueberries.
