Ingredients


150g butter

1 cup (175g) caster sugar

2 cups (350g) plain flour

2 eggs, beaten

2 or 3 bananas, mashed

1 teaspoon bicarbonate of soda

1 teaspoon baking powder

 

Method


Preheat oven to 180°C (350°F) or 170°C (335°F) for fan forced ovens.

Mix together the butter and sugar in a bowl. Add the flour to the mixture and stir to combine well. Add the bananas and mix. Sift the bicarbonate of soda and the baking powder into the mixture and mix well. Place all the mixture into a lightly greased loaf tin, and put in the oven. Bake for 45 – 55 mins.

When cooked, turn banana bread onto a wire rack to cool. Enjoy!
