Beef Sausage, Potato and Rosemary Pizzas

Serves 4

Ingredients

300 g good-quality beef sausages
2 250g pre-made pizza bases with tomato sauce
200 g grated mozzarella cheese
180 g baby red potatoes, very thinly sliced
½ small red onion, thinly sliced
1½ tbsp olive oil
1 tbsp rosemary leaves, in small sprigs +extra, to serve
1 fennel bulb, trimmed, fronds reserved, thinly sliced
1 bunch asparagus, thinly sliced
80 g baby rocket leaves
1 tbsp balsamic vinegar
¼ tsp chilli flakes or sliced fresh chilli (optional)

Method
reheat oven to 220°C (200° fan-forced).
Place pizza bases on 2 large baking or pizza trays. Top with half the cheese, potatoes and then remaining cheese. Squeeze sausage meat from casings and drop small pieces onto pizza. Top with onion and brush pizzas lightly with 1/2 tablespoon oil. Sprinkle with rosemary and season. Bake for 12 to 15 minutes or until sausage is cooked and cheese is melted and golden.
Meanwhile, combine fennel, asparagus and rocket in a large bowl. Drizzle with remaining oil and balsamic, season and toss to combine.
Serve pizzas topped with chilli, if desired, and extra rosemary. Serve with salad.
