CSR Ricotta Hotcakes with Glazed Pears
Makes about 25
250g low fat ricotta
125ml (p cup) low fat milk
73g (1/3 cup) CSR Logicane&trade Low GI cane sugar
zest 1 lemon
2 large eggs (separated)
115g ( cup) wholemeal plain flour, sifted
1 teaspoon baking powder
pinch of salt
unsalted butter, for cooking
Glazed Pears
20g unsalted butter, extra
55g ( cup) CSR Logicane&trade Low GI cane sugar
2 pears, peeled, cored, cut into thick slices
1 tablespoon lemon juice
Low fat Greek yogurt, for serving
Method
1. Combine ricotta, milk, CSR Logicane&trade Low GI cane sugar, zest, egg yolks and mix until well combined. Add sifted flour, baking powder and salt. Return wholemeal husks from sifter to bowl, gently mix to make a smooth batter.
2. In a separate bowl, beat egg whites until soft peaks form. Fold through the batter.
3. Heat a little butter in a non-stick frying pan over a medium heat. Add tablespoons of batter to pan and fry until golden on both sides.
4. Enjoy topped with glazed pears and yogurt.
Method Glazed Pears
Melt butter in a frying pan, add extra CSR Logicane&trade Low GI cane sugar, cook until golden brown. Stir in pears and lemon juice and cook until pears are soft.
CSR Scones
Makes 16
3 cups (450g) Self raising flour
2 tablespoons (32g) CSR Smart
1 cup 250ml soda water
3/4 cup (187ml) light cream or buttermilk
Light cream or fresh ricotta, to serve
Method
1. Preheat oven to 220C conventional or 200C fan forced.
2. Sift flour into bowl. Make a well in the centre, add CSR Smart, soda water and cream.Mix with a metal spoon until mixture begins to hold together. Do not over mix. Thedough should be soft and a little sticky.
3. Turn dough onto a lightly floured surface and knead gently for 30 seconds. Pat outwith hands to about 2 cm thickness. Cut with 5 cm scone cutter.
4. Place scones close together on baking paper lined baking tray. (Placing scones closetogether gives them wonderful soft sides) Bake for 10-15 minutes or until goldenbrown on top. They should sound hollow when tapped on the top. Enjoy with a spreadof fresh ricotta or light cream and fresh raspberry jam.
CSR Fresh Raspberry Jam
125g fresh or frozen raspberries
1 tablespoon lemon juice
2 tablespoons CSR Smart
Method
1. Combine CSR Smart, raspberries, lemon juice in a small saucepan and cook overmedium heat for 2 minutes. Store in fridge for four days.
Traditional jam is made using equal quantities of sugar and fruit. This fresh jam is awonderful low sugar alternative. It tastes great on the scones.
