Café Style Pulled Pork Slaw Sandwich

Ingredients
8 slices of Helga's Café Style Thick Cut
Mixed Grain bread
2 tbs olive oil
1kg pork scotch fillet, trimmed
1 brown onion, finely chopped
2 tbs fajita seasoning mix
1/4 cup water
453g jar chunky salsa
3 tsp chipotle in adobe sauce
2 limes
1/2 cup Praise Deli Style Chipotle Aioli


Slaw:
1/4 small red cabbage, finely shredded
2 carrots, peeled, grated
3 green shallots, thinly sliced
2 pink lady apples, coarsely grated
1/4 cup mint leaves

1/2 cup coriander leaves

Method

Preheat oven to 130°C fan forced. Heat a flameproof casserole dish over a medium-high until hot. Add oil and pork. Cook, turning occasionally, for six minutes, or until browned all over. Remove to a plate.
Add the onion, fajita seasoning and water. Cook, stirring for 3–4 minutes until soft. Return pork to the pan. Add the salsa and chipotle. Bring to simmer. Press a piece of baking paper onto surface of the pork then cover with a lid. Transfer to oven. Cook for four
hours. Remove from the oven. Allow to stand without removing the lid for 15 minutes. Using a fork, shred pork, leaving it in the pan juices.
Meanwhile, for the slaw, juice one lime. Pour into a large bowl. Add ¼ cup of the aioli and mix until well until combined. Add all the slaw ingredients, toss gently to coat.
Spread the remaining aioli over four slices of Helga's Café Style Thick Cut Mixed Grain bread. Top with pulled pork, slaw then sandwich together with remaining Helga's Café Style Thick Cut Mixed Grain bread. Cut remaining lime into wedges and serve with sandwich.
