Ingredients
100 millilitres skim milk
400 millilitres cream
Vanilla essence
150 grams dark cooking chocolate, broken into pieces
1 Sunny Queen egg
4 Sunny Queen egg yolks
25 grams caster sugar
Crème fraiche and chocolate curls to decorate
Method
Step 1. Pre-heat the oven to 170°C
Step 2. Heat the milk, cream, vanilla and chocolate together in a small pan, stirring until the chocolate has melted and the mixture is smoot
Step 3. Beat the eggs and sugar together, pour over the chocolate cream
Step 4. Strain the mixture; divide between six 150ml ramekin dishes. Place in a baking tray; pour boiling water to come halfway up the outside of the dishes. Bake for 30 minutes or until just set but still a little wobbly in the centre
Step 5. Cool. Chill for at least 4 hours
Step 6. Serve decorated with crème fraiche and chocolate curls
