Cottage Pie
Prep time: 10 minutes
Cooking time: 40-50 minutes
Serves 4 generous helpings
Ingredients
4 Sebago or Dutch cream potatoes
50g butter
1/3 cup milk
2 tsp salt
1 tsp vegetable oil
2 small brown onions, chopped
750g lean beef mince
2 carrots, peeled and diced in small pieces
1/2 cup Fountain Spicy Red sauce
1/2 cup Fountain Pepper sauce
2 tbs Fountain Worcestershire sauce
1 cup frozen baby peas
Method
Preheat oven to 180_C. Bring large pot of water to the boil and add a pinch of salt.
Peel the potatoes and boil in the salted water until tender. Drain and mash immediately with half the butter, the milk and 1 tsp salt. Set aside.
In a large non-stick frying pan, heat the oil over a medium heat and add the onion. Sauté for 2 minutes or until transparent and fragrant. Add the beef and cook for a further 6-8 minutes. Break up any lumps with a spoon, until all the meat has browned.
Blanch the diced carrot in boiling water or microwave for a couple of minutes until soft. Add to the pan and season with remaining salt.
Add the Fountain Pepper sauce, Fountain Spicy Red sauce and Fountain Worcestershire sauce and simmer for 5 minutes or until the liquid reduces, the flavours are intense and the meat is a dark brown colour. Stir through the baby peas.
Place the meat into a 22 x 22cm square glass or ceramic baking dish. Carefully spread the mashed potato over the top and mark the surface with a fork for a crispy top. Dot the remaining butter over the potato, with a fork.
Bake for 30-40 minutes, until the potato is a deep golden brown.
Dish Up Love On A Plate Hallmark cards, teddy bears, flowers and chocolates are all high on the agenda for Mothers Day, but in a MasterChef's home, nothing says I love you quite like dishing up a home cooked meal for Mum, according to MasterChef, Julie Goodwin.
Fountain ambassador and mother of three, Julie Goodwin, says giving Mum some time away from the kitchen, while you cook the family meal, is a more meaningful, practical gift option that won't break the piggy bank.
For me, Mothers Day is about putting my feet up and not having to worry about making lunch and dinner or doing the washing up. We pack up a picnic and head out as a family or the boys cook dinner while I sit back and relax with a new novel, says Julie.
Whether you fancy yourself a creative genius in the kitchen, or your most inspiring dish is vegemite on toast, Julie says it's simple for anyone to impress Mum this Mothers Day with Fountain Variety Sauces, and make a signature dish she'll want the recipe for!
All you need is a quick recipe and some everyday ingredients. With a little bit of effort, you can make it look really special by serving it on Mum's finest dinner set with some flowers from the garden and a home made card on the side, says Julie. It's the unexpected that makes the ordinary special, she continues.
To help you celebrate Mothers Day, Julie has developed a list of scrumptious recipes, reinventing traditional Aussie favourites, like the classic cottage pie and a simple pork fillet stir-fry, with new flavour kicks from Fountain Variety Sauces. The flavoursome recipes are designed to offer a wow factor, with little preparation and cooking time, so Dad and the kids can all chip in and spoil Mum rotten.
For Mums, there's something very special about a meal that has been prepared by their own children, says Julie. With Mothers Day just around the corner, call on your kids to pull out the white table cloth and get their hands cooking up a storm with one of these delicious recipes..
