Ingredients
300 g couscous
400 g chicken breast fillet thinly sliced
Freshly ground pepper
Juice of a lemon
1 bunch rocket
Olive oil
3 tbsp finely chopped almonds
1 tsp Gourmet Garden Hot Chilli
1 tsp Gourmet Garden Ginger
Method
1. Prepare the couscous according to the instructions on the packet and leave to cool. Mix Chicken with pepper, 1 tbsp olive oil, turmeric and Gourmet Garden Ginger and leave to stand for 20 minutes.
2. Toast the almonds in a dry frying pan. Heat 2 tbsp oil and sauté the Chicken over a medium heat, turning frequently. Leave the meat to cool to room temperature.
3. Mix the couscous with the chicken, almonds, 2 tbsp oil, lemon juice, rocket and Gourmet Garden Chilli.
4. Season with salt and pepper and serve immediately.
