Serves approx. 12 palmeritas
Ingredients
1 careme or gourmet sheet of frozen puff pastry
25g brown or granulated sugar
Nutella for spreading (approx. 15g per palmerita)
Strawberries
Mint bunch (small)
Icing sugar for dusting
Method
Spread frozen pastry sheet out on bench. Sprinkle most of the sugar (leaving some left over) evenly over the top of pastry. You can also brush the pastry with water beforehand to make the sugar stick better.
Carefully fold the left and right sides of the pastry inward so they meet in the middle.
Roll the folded pastry, left side over right to meet in the middle. Use pressure to get a lot of rings.
Place in fridge for 15 to 20 min to firm up; this will make the pastry easier to cut and make them rise more in the oven.
Heat the oven to 210°C.
Transfer the pastry log onto a chopping board. Use a sharp knife to slice the log into palmeritas – approximately finger thickness – then sprinkle with more sugar for extra crunch.
Transfer to a lined baking tray. Make sure to space the palmeritas a few inches apart on the tray as they will almost double in size
Bake for 15 min or until golden brown.
Let the palmeritas cool down for a few minutes on a rack. They will get extra crunchy as they cool down.
Spread Nutella on the palmeritas and enjoy. You can enjoy these with some sliced strawberries and mint as well, or a dusting of icing sugar. Delicious!
Note: They are perfect the first day and slowly will lose the crunch, Store in airtight container.

In line with the launch, Nutella has partnered with Spanish-born Australian chef, author and television presenter, Miguel Maestre. Inspired by his heritage, Miguel has created bespoke breakfast recipes, each with a Nutella flare.
Two of his favourite traditional Spanish breakfast recipes, Spanish Orange Magdalenes and his Mama Florentina Palmeritas, have been re-invented with the addition of the iconic hazelnut spread.
