Cafe Style French Toast

Ingredients

8 slices of Helga's Café Style Thick Cut White bread
4 eggs, lightly beaten
200ml full cream milk
1/4 cup caster sugar
1 tsp ground cinnamon
80g butter
4 tsp vegetable oil
600g mixed berries, like strawberries, blueberries, raspberries
Pure maple syrup to serve


Vanilla ricotta cream:
300g piece fresh ricotta
2 tbs caster sugar
2 tsp vanilla bean paste
1/2 cup Greek yoghurt


Method

For the vanilla ricotta cream, combine all the ingredients in a bowl, beat with a hand mixer until smooth. Refrigerate until ready to serve.
Whisk eggs and milk in a large shallow dish. Combine sugar and cinnamon in a bowl.
Dip the bread, one piece at a time into egg mixture, turning to coat. Remove, allowing the excess egg mixture to drip into dish. Transfer to a tray. Repeat with remaining bread.
Melt one tablespoon of butter and one teaspoon of oil in a large, non-stick frying pan over a medium heat until butter starts to foam. Add two slices of bread. Cook for about 3-4 minutes each side or until golden. Remove to a clean tray. Sprinkle with cinnamon sugar. Wipe pan clean. Cook the remaining bread in three batches.
Arrange two slices of French toast on serving plates. Top with some berries, a dollop of ricotta cream, a few more berries and drizzle with maple syrup.
