Serves 4
Ingredients
4 slices Helga's Spelt & Sunflower Seed bread or Helga's Golden Linseed & Barley bread, char grilled
1/2 cup low fat ricotta cheese
8 slices prosciutto
4 ripe figs, torn in half
1 tablespoon balsamic glaze
Freshly ground black pepper

Method
Spread the ricotta cheese over the char grilled bread. Top each sandwich with two slices of prosciutto, torn fig and drizzle with the balsamic glaze. Season well with freshly ground black pepper and serve immediately.
