The much-loved Night Noodle Markets returns to Hyde Park on 4-21 October as part of Australia's largest food festival Good Food Month, presented by Citi. Spicy, salty and sweet aromas will fill the air as forty sizzling hawker-style stalls showcase Asia's best cooking techniques and flavours. The Night Noodle Markets will see food-lovers indulge in signature dishes and innovative tastes from the likes of Mr. Bao, Chat Thai, Mr Miyagi and Wonderbao (both coming to Sydney from Melbourne for the first time), Chur Burger, Donut Papi, Gelato Messina and Black Star Pastry.
To celebrate 20 unforgettable years of Good Food Month events, the Night Noodle Markets presents Lucky 3 Asian Eating House, a one-time only, not to be missed rotating pop-up restaurant within the market. First to take over the stall will be Sydney stalwart Spice Temple (4-9 October), serving up their high-end modern Chinese fair in a relaxed setting. The following six nights will see Malay masters Mamak (10-15 October) delight with the bold and bright flavours of their signature roti and sambal. Diana Chan of Melbourne's Chanteen (16-21 October) closes out the eating house's run with her modern Malaysian street food. Lucky 3 Asian Eating House can be found inside Hyde Park at the Night Noodle Markets, near the St James Station entrance, Elizabeth Street.

For a taste of Thailand: Khanom Jeen Nahm Ya at Chat Thai – A favourite amongst Sydney chefs, Chat Thai's fermented rice noodles with coconut curry and fish dumplings is a classic not to be missed.
For a taste of Taiwan: Gua Bao Trio at Mr Bao - Mr Bao always keep it fun and flavoursome offering a 'Gua Bao Trio', including crackling pork belly, karaage chicken and Korean beef served in a cloud like taco shaped bun.
For a taste of China: Dim Sum with Chinese Dim Sum King – Steamed to perfection these prawn, pork, chives or mushroom dumplings accompanied with spicy dipping sauces will cure any craving.
For a taste of the Philippines: BBQ Pork Skewers at Hoy Pinoy - Hoy Pinoy is a constant star of the Night Noodle Markets, drawing a crowd with their fiery, smoky barbecues grilling succulent skewers.
For a taste of Sri Lanka – Chicken Biryanai at Foods of the Realm. This traditional aromatic spicy chicken and rice dish brings Sri Lankan culture to Hyde Park.
For a taste of South Korea: Korean potato at Twistto - Locally sourced potatoes are hand-cut into 35mm-long spirals before being battered, flash fried and topped with a range of sprinklings like chicken salt, salt and vinegar, chilli or cracked pepper.
For a taste of Malaysia: Fried Radish Cakes at May's Malaysian Kitchen - May's special Fried Radish Cakes is a much-loved hawker favourite and perfect for sharing at the Night Noodle Markets.
For a taste of Vietnam – Traditional Pho at #eatFUH – A hearty broth, soft fluffy noodles and an abundance of fresh herbs, Eat Fuh capture the essence of Vietnamese cooking with their bone broth and rare beef or chicken varieties.
For a taste of Japan – Osaka Noodles at Donburi Station – A favourite at the Noodle Markets, these guys have perfected the fried Japanese noodles served with sizzling pork.
For vegans and vegetarians – Sticky Sesame Wings at Little Turtle. Little Turtle boasts an entirely-vegan menu. Their lightly battered cauliflower coated with sweet homemade soy sauce and sprinkled with sesame seeds is a winner.
For gluten free options – Banh Khot at Hello Auntie. This dish is Modern Vietnamese at its best - coconut and turmeric pikelets, prawns and smelt roe.
Some stalls have chosen a less traditional approach to their menus, taking their inspiration from Asian travels, flavour and techniques for their own unique spin, like Mr Miyagi's truffle wagyu beef Japa-dawg with panko crumbed Wagyu beef-cheek, Burgundy onion jam, potato puree and black truffle mayo in a soft bao roll; 'Japanese Yakitori Burnt Ends & Fries' by Hard Style Kitchen, with '12 hour wood smoked pork belly cubes coated in Chinese five-spice rub, marinated in a plum BBQ sauce and served with shoestring fries', or Chur Burger's 'Pepper Pig' made of 'salt and pepper crispy pork belly, pickles slaw, chilli black bean mayo and pork cotton candy'. Rou Jia Mo will bring their Shaanxi 'Funky Bolognese', served with
fermented chilli and mozzarella, localising the offering Teppanyaki Noodles serve up 'Oz Special Yakisoba' picture 'Yakisoba with cheese, chicken and a fried egg'. Some have been inspired by unmistakable tastes of fast-food joints - POKLOL is spicing things up with their Mac N Goreng - 'Mac N Cheese with a Mi Goreng twist' and Puffle is serving their 'KFC Cheese puffle', Korean fried chicken stuffed inside a cone-shaped egg-filled cheese waffle, topped with Japanese mayo and shallots. Mama Nam, Bingsu Daddy, Flying Noodle, Grumpy G's Kitchen, Paella Del Mar, Satay Brothers, Shallot Thai, Thai Riffic, The Wagyu, Wok Master, Yan Can, McHenry Avenue, Mr Miyagi will also be cooking up sizzling, sensational dishes.
This year, the Gelato Gods, Gelato Messina, adventure by Jeepney through the Philippines with their 'The Jolli P' – Mango salsa, mango jellies, peach jellies, and condensed milk Chantilly cream topped with Graham Cracker crumb; 'Brazo De Messina' – layers of Pandan gelato, baked meringue & condensed milk custard sandwiched between a Graham Cracker crust; 'Thrila from Manila' – brown sugar banana gelato & banana bread wrapped in filo pastry, deep fried then topped with custard and chocolate peanut butter crumb; 'Allo Allo' – Caramel leche flan, caramel syrup, caramel sauce, toasted milk crumb, caramel shaved ice, evaporated milk & dulche de leche gelato. Sydney-siders sweet teeth will be further satisfied with Black Star Pastry's cult classic Strawberry Watermelon Cake, Donut Papi's traditional yeast raised donut, rolled in sugar and filled with homemade custard is available in both jam and Nutella, or sway from the normal and pick a glazed doughnut fritter topped filled with banana and apple. Waffleland is whipping up their 'Cheeky Monkey' – fresh baked waffle with peanut butter and ice cream, banana, pretzels, drizzled with caramel syrup and dipping wafer sticks and Bingsu Daddy is keeping things cool with their Thai milk tea shave ice.
South Australian winery Brand's Laira will bring the best of Coonawarra to Sydney with a pop-up Cellar Door, allowing guests to navigate their way through the markets cuisine while enjoying a glass of delicious Brand's Laira wine. For an experience with a more creative twist, Brand's Laira will host a series of exclusive Paint and Sip sessions. Guests will be able to pick up a paintbrush in one hand and a glass of Brand's Laira wine in the other and create their very own masterpiece, inspired by the vineyards of Coonawarra.
