Steeped in tales of the yesteryear and built on the historic grounds of Sydney's first hospital - Scarlett Restaurant – is one of Sydney's oldest new restaurants in The Rocks precinct. With a new Executive Chef onboard, the renowned Joey Dela Victoria is drawing attention to Scarlett Restaurant with his fresh new spring menu, with a strong Asian and European influence.

Dela Victoria and his team are serving up a vibrant collection of modern Australian dishes, with the confident use of Asian ingredients such as kimchi, congee, and kombu to highlight the heroes of the dish – showcasing the chef's diverse work experience.

Growing up in Sawtell on the Coffs Coast of NSW, Dela Victoria has enjoyed a stellar career, notching up an impressive list of celebrity chef bosses, working in some of the best restaurants in Australia and around the globe.

Namely, Dela Victoria has worked at Balzac with Matthew Kemp in Sydney when it enjoyed two Chef Hats, at Quay with Peter Gilmore when it was number one in Australia with three Chef Hats. In London, Dela Victoria worked in Gordon Ramsay's Maze restaurant, which boasted one Michelin Star, with Brett Graham at The Ledbury, which held two Michelin Stars, and in Dubai for the opening of Bread Street Kitchen within The Atlantis at The Palm Hotel.

The intimate 35-seat Scarlett Restaurant offers a unique combination of heritage charm, featuring detailed stonework, softened by relaxed tan leather furnishings, creating a moody ambient space like no other restaurant in Sydney.

Located within the heart of the Harbour Rocks Hotel, one of AccorHotels' flagship MGallery by Sofitel hotels, the intimate restaurant space opens up onto The Rocks' historic Nurses Walk, allowing the salty sea air off Sydney Harbour to breeze through its doors.

Scarlett Restaurant is open for breakfast and dinner daily and is also available for exclusive use for private dinners, cocktail parties or as an intimate wedding venue.
