Korean Beef Salad with Spicy Dressing

Beef Up Your Bowl

A delicious bowl with a spicy kick, perfect for an easy midweek meal.

Serves: 4

 

Ingredients

600g beef mince
1 tbsp sunflower oil
3 tbsp Korean ssamjang paste (or chilli paste)
3 spring onions, finely sliced on diagonal, plus extra
to serve
1/2 medium cauliflower, cut into florets
1 tsp ground coriander
1/4 red cabbage, shaved thinly
Juice of 1 lemon
1 tbsp mirin
1 tsp honey
1/2 cup kimchi
80g baby spinach
1 tbsp sesame seeds, toasted

Method
Heat a large frying pan over medium heat, add oil and swirl to coat, add mince and press down with spatula. Let it cook for 2 minutes until browned then flip and brown the other side. Start to break up with a spatula and, once mince is cooked through, add 2 tbsp. ssamjang paste and 1/4 cup water. Stir to combine, adding a little extra water if needed. Remove from heat, stir through spring onions.
Process cauliflower florets in a food processor in two batches for 30 seconds or until it resembles rice. Tip onto a large tray, spread out, drizzle with a little oil and sprinkle with ground coriander. Season and roast in 200°C fan forced oven for 12-15 minutes, until starting to crisp at the edges. It should still be light and fluffy.
Shave cabbage on a mandolin on the finest setting or with a sharp knife. Place in a bowl with a squeeze of lemon and mirin then season to taste.
To make the sauce, mix 1 tbsp. ssamjang with 1 tsp. lemon juice and 1 tsp. honey in a small bowl and mix to combine. Add a little water to loosen if necessary.
To serve, place cauliflower rice in each bowl, top with a pile of cabbage, some kimchi, baby spinach and mince, Garnish with spring onions, drizzle with sauce and sprinkle with sesame seeds.

Tips: Cook up extra mince and use for lunch or dinner throughout the week. Try the mince in a wrap, stir-fry or salad.
