Ingredients
4 Atlantic salmon fillets 200g each trimmed and boned
3 spring onions chopped finely
Fresh parsley
1 tbsp virgin olive oil
1 tbsp of dried oregano
1 clove of garlic
Fresh grounded black pepper
2 tablespoons lemon juice
Balsamic vinegar
Steamed Vegetables:
1 cup of string beans
1 bunch baby broccolini
½ cauliflower cut into quarters
2 cups sliced carrots
Water for steamer
Method
Mediterranean Salmon:
Grill and spray a little olive oil on foil paper
Slice 3 pockets into each salmon fillet and place sliver of garlic into each pocket Place fillets onto foil
Drizzle a little olive oil, lemon, black pepper and oregano
Place the Salmon under the grill for 10-15mins uncovered
Steamed Vegetables:
Boil water in a large saucepan
Add vegetables into steamer and cover until crisp and tender
Serve drizzled with balsamic vinegar and olive oil
