  • Traditionally, pavlova is served with strawberries and passionfruit but any fruit in season will do.
  • For a change, try making individual pavlovas. You could even serve individual, unadorned pavlova's along with a bowl of whipped cream, ice-cream, grated chocolate and a fruit platter so guests can decorate their own according to taste.
  • For an easy but impressive meringue dessert, spoon thick cream on to individual serving plates, putting a small dob where you want to place the meringue. Stick the meringue to the plate with the cream and then arrange fruit - for special occasions, you might try fresh or caramelised figs, macerated berries or grilled mango cheeks.
  • The base of the pavlova may be made a few days ahead and stored in an airtight container until ready to use.
