Prawn and Chorizo Pasta with Garlic and Chilli

This is the ultimate pasta dish for al fresco dining at Twilight. Pair with a glass of crisp white wine and watch the kids play in the pool for the ultimate relaxation over the holidays.


Ingredients

Parmesan to serve,

4 cloves of garlic,finely sliced

300g prawns

10g butter

1 birdseye chilli (remove seeds and finely sliced)

8 cherry tomatoes, halved

400g spaghetti

240g chorizo sliced

15ml extra virgin olive oil

1 red chilli, finely sliced

¼ cup white wine

½ cup fresh parsley, chopped

 

Method

Cook spaghetti as per instructions

Fry off the chorizo (no oil needed) until cooked, set aside

Add the oil and butter to a pan –add the garlicand chilli and cook until fragrant

Add the prawns and wine then cook for 3 minutes

Add the cherry tomatoes, parsley and chorizo.

Cook until prawns are cooked through

Stir through the spaghetti and serve with parmesan
