Sammy and Bella's Special K Breakfast

One of 2017's key food trends is nostalgia, and we just love revisiting retro foods and giving them a modern twist! So here is our take on a banana split – a delicious way to start the day or a fun and simple dessert!
Crunch and Cacao Nibs
Ingredients
Cherry compote
150g fresh cherries
50g cherry jam (or substitute any berry jam)
50ml water
Crunch
¼ cup chopped and roasted nuts of your choice
½ cup Special K Gluten Free
2 tablespoons cacao nibs
Crunch
2 ripe bananas
2 small scoops coconut sorbet
2 small scoops strawberry sorbet or soy ice-cream
2 small scoops chocolate sorbet or soy ice-cream
50g cherries, extra to garnish
Method
For the cherry compote, squash fresh cherries with the back of a large knife to remove and discard the pip. Chop roughly and place in a sauce pan along with jam and water. Cover and simmer for 5 minutes then let cool.
For the crunch, simply mix together the Special K Gluten Free, nuts, and cacao nibs.
To arrange the split, peel and slice the bananas in half lengthways. Take a long or oval shaped dish and place a scoop of each of the three ice-creams in a row, then arrange banana halves on either side. Top with cherry compote, gluten free crunch, and finally garnish with the extra cherries.
Whipped Cinnamon Yoghurt Bowl With Turmeric And Forest Berry Crunch

In 2017 we're saying hello to bowls, packed with goodness! They are so easy to make and beautiful too – just arrange lots of yummy toppings with lots of colour and texture for a delicious, complete breakfast. A sprinkle of turmeric, and you have the perfect breakfast to enjoy every day!
Ingredients
300g natural pot set yoghurt with live cultures
2 teaspoons ground cinnamon
2 scant teaspoons ground turmeric
2/3 cup Special K forest berry
125g raspberries
Method
Whisk together yoghurt and cinnamon and place in bottom of small bowls, smooth out the top
Neatly decorate top of bowl with each topping separately – Special K Forest Berry, raspberries, and a sprinkling of turmeric.

The quirky list calls out lavender, sweet potato and turmeric as ingredients to watch out for, and even suggests breakfast desserts for those who feel like a sweeter start to one of their mornings.

Creator of the new 2017 Breakfast Trends List, Liz Lyons said she selected the trends based on what she's seeing on menus as well the reaction people are having to different foods, flavours and concepts on social media.
