Leading Australian dietitian Karen Inge, APD believes that anyone can get on the road to a healthy weight, by adopting some healthy lifestyle changes.

Ingredients
4 boneless skinless chicken breasts cut into 5cm pieces
1 tbsp cornstarch
1 tbsp Gourmet Garden Garlic
1 tbsp Gourmet Garden Chilli
1 tsp Gourmet Garden Parsley
1/4 cup chicken broth
1 (425ml) can diced tomatoes
1/4 cup pepperoni or salami thinly sliced
1 cup frozen peas
1 1/3 cups instant rice
225g small prawns/shrimp or mussels
Method
1. In a large skillet coated with cooking spray, sauté chicken on medium heat until golden on all sides (about 5 minutes)
2. Mix in cornstarch to coat chicken, stirring frequently.
3.Add Gourmet Garden Garlic, Chilli, Parsley, chicken broth, tomatoes, peas and pepperoni. Stir together and bring to a boil.
4. Add minute rice & shrimp, stir and cover.
5 .Remove from heat and let stand 5 minutes. Fluff with a fork & serve hot with lemon wedges (if desired).
