A new concept restaurant has arrived in Sydney, with a philosophy of 'fresh casual' and a focus on quality Italian fare prepared fast and in front of you.
Vapiano is an innovative European concept serving made-to-order hand-tossed pizzas, fresh house-made pasta, gourmet salads and delicious dolci in a fun, relaxed atmosphere with a focus placed firmly on freshness.
Pasta is hand-made on the premises throughout the day and prepared right in front of the diner, while pots of fresh herbs on every table are perfect for sprinkling over your plate. A contemporary urban Italian fitout sees a vertical garden and live olive tree adorn the interior of the restaurant.
'Fresh casual' is the service style here – effectively a DIY model, where customers use a 'chip card', issued on arrival, to order directly from the chefs, who whip up the dish then and there to take back to the table.
The service approach is designed to put the customer in control, enabling all food and drink to be charged to an individual 'chip card', and the bill to be paid at the end of the meal.
Vapiano Australia Director, Will Cooke, brought the concept to Australia in 2009 with the opening of the first restaurant in Brisbane, having first spotted the concept while living in Europe.
Restaurants in Melbourne and on the Gold Coast have followed, and Cooke says the concept has resonated with Australian diners looking for a quick and easy dining option that doesn't compromise on quality or cost the earth.
"Aussies are so often after a more relaxed option when it comes to eating out," he said.
"Vapiano blends Italian flavour with Australian style, with traditional Italian recipes prepared to order, using only the best local meat, produce and cheese."
"When we say local, we mean local. Whenever we can, Vapiano sources produce from within 150 kilometres of the restaurant. We grow our own herbs and make our pasta and pizza bases fresh every day," Cooke said.
"At the same time, the service model means we can keep the food affordable – our selection of over 50 pizzas and pasta combinations range from $14.90 to $19.50, with salads from $8.90 to $13.90."
The Vapiano concept began in Hamburg, Germany in 2002 and is now well established with more than 120 worldwide locations in 26 countries.
Vapiano Sydney will be open from 11am to 11pm Sunday – Thursday and until midnight Friday and Saturday.
