Zucchini Chocolate Bread

There are many ways you can put a healthy twist on the all-time favourite chocolate cake, including adding vegetables! This zucchini chocolate bread has a low glycemic index, giving the kids an added kick of energy during the day – best of all, the kids won't even realise that veggies are the secret ingredient!

Ingredients
200 g finely grated zucchini
200 g whole wheat flour
50 g oat flour
50 ml coconut oil
1 tsp of baking powder
1 tsp of baking soda
A pinch of salt
1 ½ tbs of dark cocoa powder
½ tsp of nutmeg
A pinch of coconut sugar
½ tsp ground garlic
20 g ground flax seeds
60 ml grape juice
50 ml milk
1 tsp of vanilla extract
3 tsp of molasses
A pinch of tapioca
Olive oil for greasing

Method
Preheat oven to 190 oC.
Add all the ingredients, except olive oil, into a bowl.

Combine thoroughly.
Grease a mini bread loaf tray with olive oil and pour the mixture in.
Bake in the oven for about 1 hour until cooked through.
