Fluffy Coconut Flour Pancakes
Coconut is a good source of energy and therefore a great way to start your first meal of the day.
Makes 10 small fluffy pancakes + prep: 15 min. setting: 10 min.
Ingredients
4 chia eggs (4 tbs chia seeds and 1 cup of clean water)
2 cups coconut milk or almond milk
2 tsp vanilla extract
1 tbs Coconut Magic coconut nectar
½ cup almond meal or buckwheat flour
½ cup Coconut Magic coconut flour
¼ cup arrowroot powder
1 tsp cinnamon powder
½ tsp pink salt
1 tsp baking powder
2 tbs Coconut Magic desiccated coconut
¼ cup clean water
3-4 tbs Coconut Magic coconut oil for frying
Method Wet Ingredients:
Prepare the chia eggs by placing the chia seeds in a bowl with one cup of water. Set aside for 15 minutes so that it forms a gel.
Once the chia gel is ready mix in coconut (or almond) milk, vanilla extract and coconut nectar.
Dry Ingredients:
Sift the coconut flour, buckwheat flour (or almond meal) , arrowroot, cinnamon, salt and baking powder into a medium-sized bowl. Stir in the desiccated coconut.
Add the wet mixture to the dry mixture until the coconut flour is completely incorporated.
Grease pan with coconut oil. Using a few tablespoons of the batter prepare into pancake shapes and place into pan. The pancakes should be 2-3 inches in diameter and fairly thick. (Keep the pancakes small for a fluffier result.)
Cook for a few minutes on each side, until the tops dry out slightly and the bottoms start to brown. Flip and cook an additional 2-3 minutes.

Question: What inspired The Healthy Coconut?
Jenni Madison: Once I started using coconut oil, more than 6 years ago now, I was amazed at how quickly my health transformed. My stomach became flat again, my skin became smooth, and my brain fog cleared up. I set myself on a mission to share this beautiful oil with the world.
There is so much information on health out there today, and the topic of fats and oils is probably one of the most misunderstood and confusing one. The Healthy Coconut was inspired to share combined research and experience, in a simple way, to clarify some of the misunderstandings around coconut oil, other fats and oils and natural sugars.
It offers detail into the many amazing benefits of coconut and coconut oil, alongside it's many versatile uses. It was created to inspire people toward their own Healthy Coconut journey. The Healthy Coconut includes more than 100 plant-based recipes, including some beauty and body care recipes, to make it easy for people to stay healthy, live a toxin-free lifestyle and enjoy the many incredible benefits of coconut.
Question: What are the health benefits of Coconut?
Jenni Madison: Coconut oil has a unique molecular structure. It is made up of Medium Chain Fatty Acids, a combination of Lauric, Capric and Capryllic acid. These fatty acids benefit the body as they act as natural antifungal, antibacterial, and antiviral properties.
The benefits may include cleansing the body for healthier digestion, stronger immunity, glowing skin, increased energy, blood sugar and hormone balance, and increased metabolic activity. Coconut oil is also important for brain and joint health, as are many healthy fats.
When used topically, the antifungal properties found in coconut oil can help with most fungal related skin conditions such as eczema, dermatitis, and psoriasis.
Question: Can you talk us through the different sections of a Coconut?
Jenni Madison: When you crack open a coconut the first thing you will find is the coconut water. This water is packed full of electrolytes and is known as one of the body's most effective forms of natural hydration. When you then scrape around the sides of the coconut you get the coconut flesh. Also known as the white coconut meat, this can be dehydrated to make dried coconut flakes, and/or shredded to make desiccated coconut. The coconut milk is also extracted from the flesh. Coconut oil, depending on the method of extraction is made from the coconut flesh and/or the coconut milk from the flesh.
Coconut cream is simply the coconut milk with a higher fat content. I think that covers it for coconut food, but the shell does not go to waste either as this can be used to make anything from a spoon or food bowl, to building a house in the native lands!
Question: How did Coconuts change your life?
Jenni Madison: Coconuts changed my life in many ways. Coconut oil helped me to get healthy. To heal some digestive ailments, and skin conditions I had been familiar with for most of my life. My love for the product, and dedication to spread the good word on this miracle oil also led to my purpose, mission and business known today as Coconut Magic. My discovery of coconut was also a big opening for me into the wonderful world of super-foods, plant-based foods and a wholefood, food as medicine lifestyle. I have met some wonderful like-minded people along the way who I may never of met if it weren't for our common love, coconut!
