Tender caramelised pork belly is slowly simmered in a fragrant, savoury-sweet sauce, paired with perfectly boiled eggs that soak up all the deliciousness. This dish is simple to prepare yet packed with the authentic taste of home cooking, it'll have everyone coming back for seconds.
Ingredients
- 400 g pork belly
- 4 eggs
- 2 Tbsp sugar
- 4 small shallots, peeled
- 4 cloves garlic, finely diced
- 3 Tbsp fish sauce
- 1 Tbsp soy sauce
- 1 litre coconut water
- Salt and pepper, to taste
- Steamed white rice, to serve
Method
- Place a large pot of water on to boil. Once boiling add the pork belly and cook for around 15 minutes. Add the eggs, and set a timer for 7 minutes. Remove and place them in a bowl of cold water to stop the cooking process.
- After 15 minutes, remove the pork belly and rinse, then set aside to cool. Once cooled, slice into large thumb-sized pieces.
- Place a medium pot over low-medium heat and add the sugar. Cook gently until it begins to form a dark caramel (about 5 minutes). As soon as that happens have the shallots, garlic, fish and soy sauce on hand. Add them quickly but carefully (it may spit), along with the pork belly and enough coconut water to cover the pork.
- Bring to a boil then simmer for 30 minutes. Add more coconut water if needed, and season with salt and pepper to taste. Add the eggs, and cook for a further 30 minutes, or until the pork is tender.
- Serve hot over steamed rice.
