Chicken Souvlaki
Ingredients500g (1lb) chicken thighs, trimmed and cubed
Salt & pepper
Olive oil
Bay leaves
Juice of 1 lemon
MethodPlace all the ingredients in a bowl and refrigerate for 3 hours. Soak wooden skewers in cold water. Thread the chicken onto the skewers and sear on a hot barbecue. Baste with the marinade while turning frequently, until cooked.
