Ingredients
400g Free range chicken breast fillets
Pinch of mixed Italian herbs
One Fresh bag of baby spinach/rocket
Pinch of herbal salt
1 zucchini
1 red capsicum
½ punnet of cherry tomatoes
50 grams of fetta cheese
Calabrese dressing:
¼ cup lemon juice
1 tablespoon of balsamic vinegar
Pinch of oregano
1 clove of crushed garlic
Fresh basil for garnish
Method
Spray the grill or BBQ with olive oil on medium heat.
Grill breast chicken fillets for 17 minutes or until chicken is cooked.
Let chicken cool. Slice chicken into quarters.
While chicken is cooling place thinly sliced zucchini and capsicum onto grill or BBQ until cooked
In a salad bowl mix baby spinach, cherry tomatoes, fetta cheese, grilled vegetables and sliced chicken.
To finish pour Calabrese dressing and serve
Hint:- Serve with mountain bread strips seasoned with herb salt
